Ingredients

Scale
  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cups diced bell peppers (red, orange, or yellow)
  • 14 ½ oz can petite diced tomatoes
  • 15 oz can tomato sauce
  • 3 cups water
  • 2 cups low-sodium beef broth
  • ⅔ cup long grain white rice
  • Dried herbs (parsley, basil, oregano)
  • Black pepper and red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent (about 3-4 minutes). Add minced garlic and cook for another minute.
  2. Add ground beef to the pot; cook until browned (5-7 minutes), breaking it apart as it cooks. Drain excess fat if needed.
  3. Stir in bell peppers, diced tomatoes (with juices), tomato sauce, water, and beef broth. Mix well.
  4. Add dried herbs, black pepper, red pepper flakes, bay leaf, and rice. Bring the mixture to a gentle boil. Reduce heat to low and cover.
  5. Let the soup simmer for about 30 minutes until rice is tender and flavors meld together.
