  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 balls of burrata cheese (about 6 oz each)
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup fresh sage leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place sweet potatoes on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for about 45 minutes or until tender.
  3. While baking, prepare the sage pesto by blending sage leaves, pine nuts, garlic, olive oil, lemon juice, salt, and pepper in a food processor until smooth.
  4. Once the sweet potatoes are baked, cut them open lengthwise and scoop out some flesh to create space for the filling.
  5. Fill each potato with burrata cheese and top generously with sage pesto. Sprinkle toasted walnuts on top before serving.
