  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning

  • 1/2 cup sundried tomatoes, finely chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons cream cheese, softened
  • 1 garlic clove, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally to create pockets. Season both sides with garlic powder, paprika, salt, and pepper.
  3. In a mixing bowl, combine sundried tomatoes, spinach, mozzarella cheese, Parmesan cheese, cream cheese, and minced garlic until well blended.
  4. Fill each chicken pocket with the mixture and secure edges with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium heat. Sear stuffed chicken for 2-3 minutes on each side until golden brown.
