  • 1/2 cup melted butter
  • 1 cup softened butter
  • 2 tablespoons fresh sage, stem removed and chopped
  • 2 tablespoons fresh rosemary, stem removed and chopped
  • 1 tablespoon fresh thyme, stem removed and chopped
  • 1 whole lemon, zested (preferably organic)
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock

Instructions

  1. Preheat your oven to 300°F.
  2. Add 2 cups of water to a roasting pan to create steam.
  3. Mix melted butter, white grape juice, and stock in a saucepan for basting.
  4. Combine softened butter with herbs, lemon zest, minced garlic, and salt; rub under turkey skin.
  5. Optionally stuff the turkey; tie legs and tuck wings.
  6. Soak cheesecloth in the basting mixture and cover the turkey.
  7. Roast in the oven, basting every 20-30 minutes until the internal temperature reaches 180°F.
