  • 1 cup fine bulgur wheat (uncooked)
  • 3 bunches fresh parsley (chopped)
  • 1 bunch fresh mint leaves (chopped)
  • ½ cup green onions (thinly sliced)
  • 2 tomatoes (diced)
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Soak the bulgur in 4 cups of boiling water or chicken broth for 15-30 minutes until softened. Drain and set aside to cool.
  2. Remove tough stems from parsley and mint, then finely chop the leaves. Add them to a large salad bowl.
  3. Incorporate the soaked bulgur, green onions, and diced tomatoes into the bowl.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad mixture and toss gently to combine. Adjust seasoning if necessary.
