  • 4 to 5 lb beef shoulder
  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp dijon mustard
  • 1 head garlic
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • 2 firm apples, peeled and cut into wedges
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 red onion, cut into thick rounds
  • 2 tbsp neutral cooking oil

Instructions

  1. Season the beef with salt and pepper. Sear in a Dutch oven over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, sauté red onion until softened, then add garlic.
  3. Pour in apple cider and chicken broth; stir in dijon mustard and dried minced onion. Bring to a simmer.
  4. Return beef to the pot, add herbs and apple wedges, cover tightly, reduce heat, and braise for 3½ hours until tender.
  5. Let rest before slicing and serve warm with your favorite sides.
