  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 5 sprigs rosemary
  • 68 cloves garlic
  • 2/3 cup apple vinegar
  • 1 cup water
  • 4 tablespoons honey

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Prepare the lamb: Finely chop rosemary, slice garlic, score the meat, and season with olive oil, salt, pepper, smoked paprika, and chopped rosemary. Insert garlic pieces into cuts.
  3. In a roasting pan, mix water and apple vinegar before placing the seasoned lamb shoulder inside. Cover tightly with aluminum foil.
  4. Roast for about 2 hours and 15 minutes.
  5. After roasting, drizzle honey over the lamb and return to the oven uncovered for an additional 30 minutes for caramelization.
