Thai Peanut Chicken Wraps are a vibrant and flavorful dish that combines tender chicken, crunchy vegetables, and a creamy homemade peanut sauce, all wrapped in soft tortillas. This quick and satisfying meal is perfect for lunch, dinner, or meal prep.

  • 2 cups cooked chicken breast, shredded or sliced
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice (or rice vinegar)
  • 1 teaspoon sesame oil
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 red bell pepper, thinly sliced
  • 46 large flour tortillas

Instructions

  1. In a mixing bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, garlic powder, and ground ginger until smooth. Add water as needed for desired consistency.
  2. In a large bowl, combine shredded chicken with 3–4 tablespoons of the peanut sauce; mix well.
  3. Prepare vegetables by shredding carrots and cabbage and slicing the bell pepper.
  4. Optionally warm tortillas in the microwave or a dry skillet for easier rolling.
  5. Assemble each wrap by placing chicken mixture in the center of a tortilla along with vegetables; drizzle with additional peanut sauce if desired.
  6. Roll tightly from bottom to top and slice in half to serve.
