  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste
  • 1 1/2 tablespoons lime juice
  • 1/31/2 cup smooth peanut butter

Instructions

  1. In a medium bowl, whisk together marinade ingredients: olive oil, coconut milk, soy sauce, brown sugar, chili paste, and lime juice.
  2. Reserve 1/3 cup of the marinade in a separate container for the peanut sauce.
  3. Add chicken strips to the remaining marinade; coat well and refrigerate for at least 6 hours or overnight.
  4. Soak wooden skewers in water for 30 minutes before grilling.
  5. Preheat your grill or oven. Thread marinated chicken onto skewers and cook until fully cooked (internal temperature of 165°F), about 15-20 minutes in the oven or 6-8 minutes on the grill.
  6. For the peanut sauce, combine reserved marinade with additional coconut milk in a saucepan and simmer briefly; stir in peanut butter until smooth.
