  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • 1/4 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 34 tablespoons heavy whipping cream (cold)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine softened cream cheese and granulated sugar in a mixing bowl. Mix until smooth, then add flour, vanilla extract, ground cinnamon, heavy whipping cream, and eggs. Pour into one prepared pan.
  3. In another bowl, whisk together flour, baking powder, and spices. Cream softened butter with brown sugar in a separate bowl before adding oil, vanilla extract, egg, milk, and dry ingredients. Pour into the second pan.
  4. Bake both layers for 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. Assemble by layering spice cake at the bottom, followed by the pumpkin pie, cheesecake layer on top of the pie, and finish with the second layer of spice cake.
  6. Make frosting by beating softened butter with powdered sugar and vanilla until fluffy; frost the assembled cake.
