  • 2 tbsp apple cider vinegar

  • heaping 1/2 tsp sea salt
  • Freshly ground black pepper
  • 2 large broccoli crowns (florets only), finely chopped
  • 1 1/2 cups red grapes, halved
  • 1/3 cup roasted salted almonds, finely chopped
  • 3/4 cup diced red onion
  • 1/3 cup dried cranberries

Instructions

  1. Soak 3/4 cup of raw cashews in water for at least 2 hours or use hot water for a quick soak of 10 minutes.
  2. Drain the cashews and blend them with 1/4 cup water, 2 tablespoons apple cider vinegar, 2 tablespoons maple syrup, minced garlic, sea salt, and black pepper until smooth.
  3. In a large mixing bowl, combine finely chopped broccoli crowns, halved grapes, chopped almonds, diced red onion, and dried cranberries.
