  • 100 g dark or semi-sweet chocolate
  • 50 g natural cocoa powder
  • 230 g unsalted butter
  • 4 large eggs
  • 150 g granulated sugar
  • 100 g brown sugar
  • 100 g all-purpose flour
  • 250 g mascarpone cheese
  • 200 g whipping cream
  • 50 g powdered sugar
  • 2 teaspoons espresso powder
  • 150 g hot water
  • 12 ladyfingers
  • 1 tablespoon dark vanilla extract (optional)
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Melt chocolate and butter together over low heat until smooth.
  3. In another bowl, whisk eggs with granulated and brown sugars until combined. Add the melted chocolate mixture and stir well.
  4. Sift in cocoa powder and flour, mixing until just combined.
  5. Pour batter into the prepared pan and bake for about 40 minutes, or until a toothpick comes out with moist crumbs.
  6. Let brownies cool completely before preparing the topping.
  7. Mix mascarpone cheese, whipping cream, powdered sugar, vanilla extract, and espresso powder until smooth.
  8. Dip ladyfingers in hot water mixed with dark vanilla extract (if using) and layer them over cooled brownies.
  9. Spread the mascarpone mixture on top of ladyfingers and dust with cocoa powder before slicing.
