  • 1 tbsp avocado oil
  • ½ cup finely chopped yellow onion
  • ½ tsp fine sea salt
  • 34 cloves garlic, minced
  • ½ cup sliced carrots
  • ½ cup sliced celery
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 2 cans whole Roma tomatoes
  • 4 cups vegetable broth
  • 2 bay leaves
  • 16 oz gnocchi
  • ½1 cup heavy cream
  • 1 tsp cane sugar
  • 1 tsp balsamic vinegar
  • ¼ cup grated pecorino cheese
  • Freshly ground black pepper to taste

Instructions

  1. Heat avocado oil in a large pot over medium-high heat.
  2. Sauté chopped onion and sea salt for 5–6 minutes until golden.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in carrots, celery, tomato paste, and Italian seasoning; cook for 1 minute.
  5. Add canned tomatoes with juices and break them up with a spatula.
  6. Pour in vegetable broth, add bay leaves, and simmer partially covered for 15 minutes.
  7. Remove bay leaves and blend the soup until smooth using an immersion blender.
  8. Return to heat; add gnocchi and heavy cream, simmer for another 10 minutes.
  9. Stir in cane sugar, balsamic vinegar, grated pecorino cheese, and black pepper before serving.
