  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup organic sun-dried tomatoes
  • 1 Tbsp organic tomato paste
  • 2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 1 cup coconut cream (or heavy cream)
  • 1/2 cup organic vegetable stock
  • 3 Tbsps white cooking apple vinegar (or additional veggie stock)
  • 1/2 lemon, freshly squeezed
  • 1 cup chopped kale, organic
  • 1/2 cup freshly grated cheese + more for garnish

Instructions

  1. In a large skillet over medium heat, melt the unsalted butter. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Stir in the sun-dried tomatoes, tomato paste, Tuscan Marry Me blend, and sea salt. Mix well to combine all flavors.
  3. Pour in the coconut cream and vegetable stock. Stir continuously until the mixture is heated through. Add the white cooking apple vinegar (or additional veggie stock) followed by fresh lemon juice.
  4. Add chopped kale to the skillet. Cook until wilted, approximately 2-3 minutes, stirring occasionally.
  5. Remove from heat and stir in freshly grated cheese. Serve warm with extra cheese on top if desired!
