  • 1/2 cup melted coconut oil
  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. In a mixing bowl, combine melted coconut oil, pumpkin puree, brown sugar, and white sugar; whisk until smooth.
  2. Add flour, pumpkin pie spice, salt, and baking soda; mix until a semi-sticky dough forms. Fold in half the chocolate chips.
  3. Chill the dough in the fridge for at least 1 hour (up to 24 hours).
  4. Preheat oven to 325°F and line a baking tray with parchment paper.
  5. Scoop dough into 1.5 Tbsp portions on the tray, leaving space between each cookie. Flatten slightly and top with remaining chocolate chips.
  6. Bake for 12-14 minutes until edges are golden but centers remain soft.
  7. Cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
