  • 12 ounces white chocolate
  • 1/2 cup heavy cream
  • 2 teaspoons cornstarch
  • 1/2 cup water

Instructions

  1. Preheat your oven to 350°F (175°C). In a food processor, crush graham crackers until fine. Mix with melted butter and 2 tablespoons sugar, then press into a tart pan. Bake for 10 minutes until golden.
  2. For the filling, combine cranberries, 1/2 cup sugar, cornstarch, and water in a saucepan over medium heat. Stir until cranberries burst and mixture thickens (about 10 minutes). Let cool slightly before spreading on the crust.
  3. To prepare the ganache, heat cream in another saucepan until hot but not boiling. Add chopped white chocolate; let sit for 5 minutes before stirring until smooth. Mix in unsalted butter until incorporated.
  4. Pour ganache over cranberry filling and refrigerate for at least 2 hours to set.
